Dungeness Crab with Chocolate Mint, with Ginger, with Corn, with Carrots, Brussel Sprouts and Garlic Butter with Fresh Lemon

There, the title gave you all the ingredients for a tasty seafood dinner, all you have to do is put them together, which is easy as pie. As pictured, prepare all the ingredients before you even fire up any heat. There’s nothing like a bumbling, fumbling cook in panic mode over the stove, trying to find the fresh ginger, trying to get it chopped before something in the pan is overcooked. This is not season one of Master Chef, and you probably won’t have the “assistance” of Gordon Ramsey standing over you with every other word bleep-able.

Get the water boiling for the pasta. I recommend angel hair but I used some really nice fettuccini I had left over in a zip-lock baggie. Sprinkle in a little salt.

Start with the crab. Rinse them well and fill a pan with about 2 inches of water, toss in a fresh bay leaf and bring to a boil. Gently place the Dungeness crab in and go to work on the spices. I sprinkled in some cayenne pepper, cumin, paprika, salt, pepper, red crushed pepper, chili pepper. Just dashes and sprinkles of these, don’t overdo it even if you like your crab spicy.

Once the water is reduced in about 15 minutes pour some of it out. Now you have a water sauce with the spices you just added. Now add the diced ginger and small cut portions of corn on the cob, the chopped Brussel sprouts, slivers of carrot, the garlic and a tablespoon of butter. The water should be reduced enough to pan sear the garlic. Let all this steam uncovered for about 7 minutes. You want the crab nice and steamed.

The water should be boiling for the pasta so add that and I don’t need to tell you how to cook pasta. Do your thing and strain it once it’s to your liking.

Now it’s time to test your culinary skills. Add the strained pasta and gently fold into the crab mix. I wouldn’t overwhelm the pan with pasta as it is only a guest in this meal just like the other ingredients other than the star of the show: Dungeness Crab. Drop the chocolate mint on top. After about 2 minutes you are ready to serve.

Squeeze a bit of fresh lemon over this dish and then very lightly sprinkle nutmeg over the finished plates and sit back and let the compliments pour in. And oh, don’t forget to make yourself a plate. And oh, don’t forget to treat yourself to a Bananas Foster. Took less than 5 minutes and garnished with a fresh sprig of Chocolate Mint . (Another recipe, another time.) Yum.
